How it is made

From the spring to the crown cap in one building.

  1. 01

    Source

The water comes up at 7 °C through granite. It is filtered once through sand and never treated with chlorine.

  2. 02

    Blend

Quinine, cane sugar and citric acid are dissolved in a small batch of the same water, then added to the tank.

  3. 03

    Carbonate

The blend is chilled to 2 °C and carbonated to 3.6 volumes. Cold water keeps the gas in solution.

  4. 04

    Bottle

Filled into 200 ml green glass and capped within the hour. Bottles are returnable and washed for reuse.
